Ingredients
- 2 ripe tomatoes, crushed
- Small gooseberry-sized ball of tamarind, soaked
- 1–2 tsp Khushilo Rasam Powder
- ¼ tsp Khushilo Turmeric Powder
- ½ cup thin cooked toor dal water (optional)
- Salt to taste
- Coriander leaves
- Tadka: 1 tsp ghee, ½ tsp mustard seeds, ½ tsp cumin, curry leaves, a pinch of hing
Method
- 1
Boil 3 cups water with the tamarind extract, tomatoes, turmeric and salt for 8 minutes.
- 2
Add the rasam powder and dal water. Lower the heat.
- 3
When a froth rises to the top, switch off — don’t let it boil hard.
- 4
Pour the hot ghee tadka over and add coriander leaves.
The froth test
Rasam is ready the moment it froths. Boiling it further makes the pepper taste harsh and the tamarind sharp.
