Ingredients
- 500 g chicken, curry-cut
- 2 cups jeera samba rice (or basmati), soaked 30 minutes
- 2–3 tbsp Khushilo Donne Biryani Masala
- Green paste: 1 cup mint, 1 cup coriander leaves, 4 green chillies, 1-inch ginger, 8 garlic cloves
- 2 onions, thinly sliced
- 1 tomato, chopped
- ½ cup curd
- 3 tbsp oil + 1 tbsp ghee
- Salt to taste
- Juice of ½ lemon
Method
- 1
Grind the green paste with a splash of water.
- 2
Heat oil and ghee, fry the onions until golden. Add the green paste and cook for 3–4 minutes.
- 3
Add the donne biryani masala, tomato and curd. Cook until the oil separates.
- 4
Add the chicken and salt. Cook covered for 12–15 minutes until almost done.
- 5
Add the drained rice and 3 cups hot water (2 cups if using basmati). Add lemon juice and check salt.
- 6
Bring to a boil, then cover tightly and cook on the lowest heat for 15–18 minutes. Rest 10 minutes before opening.
The rice matters
Jeera samba rice is short and fragrant and soaks up the green masala — that’s the classic donne biryani texture. Basmati also works; just use less water.
Tips
- Serve with onion raita
- A boiled egg on top is the military-hotel way
