How to Store Spices So They Stay Fresh
Heat, light, air and moisture are what make powders dull and lumpy. Here’s how to keep them at their best.
The four enemies
- Heat — don’t keep the masala dabba right next to the stove
- Light — opaque boxes or a closed cupboard work best
- Air — close the pack tightly or use an airtight jar
- Moisture — always use a dry spoon, never one that’s been in the pot
Buy in the size you use
A 100 g pack of an everyday spice like turmeric or chilli is used up in a few weeks in most homes. Occasional masalas are best kept sealed until needed.
Check the best-before
Every pack carries a best-before date. Ground spices slowly lose aroma over time, so use the oldest pack first.
