Setting Up Your Masala Dabba
The seven-bowl spice box that sits by every Indian stove — what to put in it and how to keep it fresh.
The classic seven
- Turmeric powder
- Red chilli powder
- Coriander powder
- Cumin powder (or seeds)
- Mustard seeds
- Your go-to masala — sambar powder in many Karnataka homes
- Hing or garam masala
Keep it small
Fill each bowl with only a week or two’s worth and keep the rest sealed in the pack. That way the dabba is always fresh.
Wipe it dry
Wash and dry the dabba fully every few weeks before refilling.
